There was a diet kitchen on each floor of the St. Paul Sanitarium. Food was delivered in bulk form to the floors on a dumbwaiter from the main kitchen. Student nurses would pass out the proper food and amount to each patient. Dishes and silver were stored on each floor, and even dishwashing was done on the individual floor.
